This garlic spinach artichoke dip is easy to make, it tastes great, and kids love it!
- 1/3 cup mayonnaise
- 2 cups fresh spinach
- 2 cloves garlic
- ½ cup artichoke hearts
- 2 cups Parmesan, grated
- Puree mayonnaise, spinach, and garlic in a food processor.
- Add in the artichoke hearts
- Pulse to chop
- Add the cheese and continue to pulse until everything is mixed.
You can enjoy this as a cold dip, spread on a sandwich, or stuffed into peppers (bake at 375°F on the top rack for 20 minutes or until hot and bubbly).
Keep covered in the refrigerator if you have leftovers.
