This garlic spinach artichoke dip is easy to make, it tastes great, and kids love it!

Ingredients

  • 1/3 cup mayonnaise
  • 2 cups fresh spinach
  • 2 cloves garlic
  • ½ cup artichoke hearts
  • 2 cups Parmesan, grated

Directions

  • Puree mayonnaise, spinach, and garlic in a food processor.
  • Add in the artichoke hearts
  • Pulse to chop
  • Add the cheese and continue to pulse until everything is mixed.

You can enjoy this as a cold dip, spread on a sandwich, or stuffed into peppers (bake at 375°F on the top rack for 20 minutes or until hot and bubbly).

Keep covered in the refrigerator if you have leftovers.
