Gluten Free, Dairy Free Waffle Recipe

Serve these with an assortment of toppings for a build-your-own waffle bar!  The possibilities are endless, from fresh or pureed fruit to homemade jams or syrups.  Experiment with nut butters or chopped nuts for some extra protein and good-for-you fat.  You could even try freezing any leftover waffles and pop them in the toaster when you’re ready for a quick and easy breakfast.  Many thanks to Mandy for sharing!

Ingredients:

  • 1/2 cup brown rice flour
  • 1/4 cup millet flour
  • 1/4 cup white sorghum flour
  • 1/4 cup tapioca flour
  • 1/2 cup potato starch
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 cup oil (your choice)
  • 2 eggs (or egg replacer)
  • 1 1/2 cups water
  • 1 teaspoon sugar

Directions:

Mix all ingredients together. Add a little more flour or water if your consistency is off. I find that the recipe works best if I mix all of the wet ingredients and then add the dry ingredients. Pour into your waffle iron and cook until slightly crispy.

I have to make 2-3 batches of this recipe to feed my family of six, depending on how hungry everyone is. While you may be tempted to double or triple the batter, it doesn’t turn out as well. Wait until you have the last waffles in the iron, and then make the next batch of batter.

  1. These sound good! Though I’d probably use rice or hemp milk instead of water. And good tip about making separate batches — I find doubling to often not work with gluten-free recipes.
