Roasted Broccoli & Mushrooms
I love vegetables! I love them raw, steamed, sautéed, and even fried… I don’t think there’s a veggie I won’t eat. And one of my favorite ways of cooking them is to roast them in the oven. Roasting your vegetables allows for better nutrient absorption, while bringing out their naturally delicious flavors. Lately my favorite combo has been broccoli and mushrooms. It’s quick, easy, and makes for a great side dish or pasta topping. Enjoy!
- 2 crowns of broccoli, washed and trimmed
- 6-8 oz. mushrooms, wiped clean and quartered
- 1-2 T. olive oil
- salt & pepper to taste
- garlic & herb spice blend, to taste
Directions:
- Preheat oven to 400 degrees. Place broccoli and mushrooms on baking sheet. Drizzle with olive oil, add seasonings and toss to coat.
- Bake for about 15 minutes.
Tip: when preparing mushrooms, do NOT rinse. Get a damp paper towel and wipe clean. Mushrooms are like sponges. So save their soaking powers for the good stuff. A waterlogged mushroom is a rubbery one…
