Full of greens and healthy goodness, these Spinach Rounds are easy to make and easy to alter!

  • 2 bags organic baby spinach
  • several leaves of organic kale and/or collard greens and/or a handful of broccoli florets
  • 3-4 organic carrots, shredded
  • 1 tbsp-ish olive oil
  • 1 egg
  • 2 tbsp-ish fresh ground flax seeds
  • 2 tbsp-ish fresh ground chia seeds
  • 2 tbsp-ish fresh ground organic sunflower seeds
  • 2 tbsp-ish nutritional yeast
  1. Preheat oven to 375.
  2. Steam the greens and chop them up, combine with all other ingredients and mix well with a wooden spoon.
  3. Drop small portions onto parchment lined cookie sheet and form into a little patty that’s about 2″ in diameter.  Or you can spray a mini muffin tin with olive oil and bake them as little cups.
  4. Bake for 25 minutes or until the edges are looking a little golden brown and crispy.
They can be refrigerated and/or frozen.

    thank *you* for sharing, NPN!
lately i’ve been making these into patties with cooked millet or quinoa before baking (375º for 25 minutes) to make them even more of a meal… bonz loves them hot or cold!

can I fry them? I know it’s less healthy but our oven is broken 🙁
